Rosemary Leg of Lamb

Preparation Time: 15 minutes

Cooking Time: 1 hour 40 minutes

Servings: 10

Ingredients:

¼ cup olive oil

4 garlic cloves, chopped

¼ cup fresh rosemary

3 tablespoons Dijon mustard

2 tablespoons maple syrup

Salt and ground black pepper, as required

1 (4-pound) leg of lamb

Method:

In a food processor, add the oil, garlic, herbs, mustard, honey, salt and black pepper and pulse until smooth.

Place the leg of lamb and marinade into a glass baking dish and mix well

With plastic wrap, cover the baking dish and refrigerate to marinate for 6-8 hours.

Arrange a wire rack in a baking pan.

Arrange the leg of lamb into the prepared baking pan.

Arrange the drip pan in the bottom of Iconites Air Fryer Oven.

Place the baking pan over the drip pan.

Select “Bake” of Iconites Air Fryer Oven and then adjust the temperature to 420 degrees F.

Set the timer for 20 minutes and press “Start” to preheat.

After preheating, insert the baking pan in the center position of oven.

After 20 minutes, set the temperature to 320 degrees F for 1 hour and 20 minutes.

When cooking time is complete, remove the baking pan from oven.

Place the leg of lamb onto a cutting board.

With a piece of foil, cover the leg of lamb for about 10 minutes before slicing.

With a sharp knife, cut the leg of lamb into desired size slices and serve.
